PRODUCT INFORMATION

Two charges took place in 1998 and 2000, before the distillery was de-commissioned in 2001. It was then re-commissioned for a further two charges in 2011 and 2014.
For the 2000 distillation we sourced double strength malt extract from Coopers Brewery, made from pale malted Tasmanian Franklin barley and seeded with a special French yeast strain originating from the Cognac district. The brew was fermented in our Angaston cellars at the Yalumba winery, then distilled through our original 1931 pot still.
The spirit was filled into old hogshead coopered at Yalumba.
Right from the outset the 2000 vintage showed all the hallmarks of becoming an outstanding whisky. Regular tastings over the years showed a pleasing progression in flavour development, exhibiting great diversity in richness and complexity.
This 18-year-old Single Malt release has been selected from the 2000 vintage, cask no. 970637, which has been judiciously topped with small quantities of Smith’s Single Malts from 1997 and 1998 vintages. The richness of the 2000 vintage, enhanced with the liveliness of the earlier vintages, has resulted in a finely balanced whisky.

TASTING NOTES A very deep, brooding colour and intense flavour. Barley sugar, stewed fruits and a round, full palate with soft, velvety layers of golden syrup, dried spice and cumquats. This delivers butterscotch and vanillin floral overtones with soft sweet malt and crème caramels. The spirit is bright and lively finishing magnificently long and sweet with maltiness and spice. Big, rich and intense.

The idea came about while our Managing Director Robert Hill Smith was taking a well earned sabbatical, and our Production Director Peter Wall was standing in as titular head.
In his early days with the company Peter had experienced first hand the activities that took place during our times of brandy distillation. As a bit of a nostalgic throw back, Peter thought it a good idea to put a few charges through our aging pot still before it was de-commissioned.
At the time we were distributing Glengoyne Single Malt Scotch Whisky and Coopers ales and stouts. It was a nice combination that enabled us to learn more about the finer points of whisky distillation from our friends in Scotland and source brewer’s wort from Coopers. The project had begun.
In August 2012 during our barrel tasting, we recognised that the final cask of our 1997 distillation, cask no. 970331, should be released as something very special: a 20 year old whisky. The decision was made to leave it in its current cask until its release in 2019.

TASTING NOTES Light golden amber in colour this emanates spice, gingerbread and dark orange chocolates. This is a real winter warmer with Christmas cake, brandy snap, honey and spices developing over time in the glass. Shows a tang of grapefruit and poached pear with liquorice and sweet maltiness. Delivers a crisp attack of spirit, narrow and long with a dry honeyed finish. Very elegant.

WHAT’S THE STORY?

The Spirit Thief labels are genuine Hobart Penitentiary criminal records from very early 20th century, a time when Hobart Town was a hard place to live and survive. Hector Musselwhite (our Tempranillo cask label) was sentenced in 1908 for 6 charges of ‘false pretence’ and given 6 months Gaol time. Arthur Jennings (our Shiraz cask label) was, according to his record, a hairdresser and sentenced in 1904 for 6 months Gaol time for being ‘Idle etc’. We feel these men (and women) were (most-likely) hard done-by and now pay tribute to them on our labels a century later. Each new release of Spirit Thief will feature a different ‘Thief’.

THE DETAILS:

This first release batch of whisky was distilled at the original Redlands Distillery in Plenty, Derwent Valley by Dean Jackson and Robbie Gilligan (now Chair of the Tasmanian Whisky Producers Association), matured in part at Plenty and then moved to Kempton, now home to Old Kempton Distillery and was bottled and filtered at Belgrove Distillery. Every bottle is individually numbered. Check your label!

From 12-15 years, the Bourbon in this limited Edition rested in a reserved lot of American oak barrels before finishing in 20 year old Spanish Oloroso Sherry Casts that Eddie Russell personally hand-selected during his travels to Spain. 50.5% ( 101 Proof )

Batch No.1 of Revival comes with a mashbill of 75% Corn, 13% Rye and 12% Malted Barley. With aromas of cherry pie, raisins, citrus, nuts and a touch of oak. It delivers soft and creamy hints of spice and sweet tropical fruits on the palate and a long and lingering finish of dried apricots, honey and subtle spice. With strong reviews from the likes of whiskyadvocate (below) and miniscule allocations, it's a must for any serious Wild Turkey collector. 1600 cases worldwide, very limited Australian stock.

 

Tasting note: Bright topaz. Typically big Turkey bouquet with sweet peach fruitiness balanced by crisp oak, orange zest, new leather and whiffs of shellac. Exposure adds scents of berry muffin, rock lollies and trace peppermint. The oloroso is more prominent on the palate: Initially pecan pie, rich vanillas and oak shavings underpinned by a fiery, gently bittersweet spirit. The finish sees lots of wood spice trailed by nutty, leathery, notes as well as pepper and hints of seville orange and muddled mint, while the aftertaste is vibrant, spiced-up and beautifully sustained. The sherry-bourbon combination really works. It's better again after 5-10 minutes breathing in the glass. 50.5% Alc./Vol.

 

Other reviews... Driven by lovely maple syrup and sweet bread pudding, this is like waltzing into a bake shop serving up warm sticky buns—all bready sweet, spice, and dried raisins—laced with toasted oak. The body is delightfully rich and viscous, with a generous jolt of sweetness and spice that pours long and satisfying. The sweet maple, candied nuts, dried berries, and white pepper spice strike a wonderful balance.

...Wild Turkey’s fruit-forward flavor profile and higher aged bourbon stock, mixed with a gentle barrel finish, results in a bourbon with balance and complexity.... nicely constructed and gets better the more time you spend with it.
