Situated in the town of Dongara, Western Australia. This distillery pays homage to Australia by using uniquely Australian spices to add a different element of flavour found in traditional spiced varieties from the Rum Industry.
Using Kakadu Plum, Quandong, Wattle Seed, Lemon Myrtle and Wild Rosella these spices impart an Australian Bush tucker flair to the traditional Spiced recipe of old. The Spirit is distilled from a fermented ‘Wash’ of Dark Brown Sugarwhich is typically, much smoother than it’s molasses counterpart, then Mellowed with French oak for a minimum of 4 weeks then spiced.

This unique rum is produced entirely by hand in copper pot stills and aged in whisky barrels at Lark Distillery — the home of the original Tasmanian Single Malt Whisky. its unique flavour is the result of years of dedication to the art of distillation, in the pristine environment of Tasmania, Australia.
Nose: Hot but clean on the nose, maple syrup, Charred Orange peel, carried through with a big Oak and Tannin profile.
Palate: Caramel, Toffee, Orange Peel, Crème Brulee, stewed peaches, golden syrup ANZAC biscuits. Complex and balanced it holds up with surprising length on the palate with the whisky cask influence obvious.
Finish: Long lingering profile of toffee, tobacco and leather. Not a particularly sweet rum as no sugar has been added.

On the 2nd of November 1830, ten members of the infamous Ribbon Gang were publicly hanged for murder, bushranging and horse thieving. This was the first ever public hanging in Bathurst. Dead Man's Drop evokes the spirit of that era, marrying Barrel-Aged Rum with Orange Peel, Vanilla and the Australian native flavours of Ringwood and Cinnamon Myrtle.
Adelaide Hills Distillery - Gunnery White Spiced Rum
Adelaide Hills Distillery wanted to produce a White Spiced Rum that wasn’t driven by Vanilla and sweetness, eschewing artificial flavours and aromatics in favour of natural ingredients with a mature approach. An expression of Australia, the Gunnery Spiced White uses pot distilled distillates from both sugar cane and molasses, and blends Australian native ingredients with traditional rum spices.
This product is handcrafted and bottled in The Adelaide Hills.
