Bourbon Casks are the most popular cask type in Single Malt Whisky, and we can understand why; not only is there a plentiful supply, but the Whisky that can be obtained from these American White Oak treasures is breathtaking. Using this traditional cask, we have aged this Whisky in a non-traditional way; our unique Adams Distillery half-filled “Slosh” cask programme, we half fill casks and roll them around regularly to develop and enhance our Whisky. We have also batched in some small casks to create a well-balanced Whisky; hints of vanilla & honey are intertwined with oak and a very slight Smokey sweet finish. 47.2% ABV 700ml.

On 1 August, 2019 Archie Rose Distilling Co. launched Rye Malt Whisky, the first of its core range whiskies, nearly five years on from when the Sydney based distillery first began making spirits.
The first release of 2,071 bottles is marked and individually numbered as ‘1st batch’ and on official, sold out from the Archie Rose web site in under an hour. This is a rare piece of Australian whisky history and is very hard to come by.

Our Single Malt Whisky has been matured predominantly in 100, 200 and 300-litre Australian apera (sherry) casks, complemented by a selection of ex-bourbon and Archie Rose’s own 36-month air-dried ex-rye casks, each coopered with a specific balance of both char and toast - with the latter being unusual in the realm of distilling where the lower heat and longer duration toasting process penetrates further into the oak of the cask and offers an entirely different level of complexity than casks that only feature a more traditional char.
The natural sweetness of these casks complements the savoury charisma of the spirit, revealing fresh herbs, shortbread biscuits, raisins, toffee and dark chocolate on the nose. Meanwhile, the palate is luscious with well-integrated flavours of sticky date pudding and amaretto with a final note of espresso.

The third release Peated Rye Whisky aged for 3 years and cut at 60%. This is a grain to glass model with the obvious benefit that all aspects are under Peter Bignell's control. On the nose - old smoke, quite sweet with some vanilla and honey fudge On the palate smoky and fruity, quite sweet with some cold ash aromas, caramel, earthy like a campfire in a warm summer rain, burned apricot, We call this a ‘smoky every-day-dram’!

This is the second cask strength release from NSW Distillery Black Gate. Made by renowned husband & wife team, Brian and Genise Hollingworth, they have been growing a huge fan following for their Australian Single Malt Whiskies and Rum.
Black Gate 620s is a marriage of 6 x 20L Barrels, bottled straight out of the cask at a tasty 71.1% ABV.
184 bottles were produced. Get by quick as these won't last. No chill filter or artificially colouring.
Nose: At 71.1% approach at your own risk. Once you adjust to the high ABV, you are introduced to toffee, stone fruit, golden syrup and charred eucalyptus in the distance.
Palate: Lots of Vanilla, burnt caramel over a sticky date pudding, stone fruit, spice and heat.
Finish: medium length, an almost syrupy mouthfeel, loads of Vanilla, stone fruits again and spices.
Matured in a sherry cask for just over 3 years in a 100 litre sherry cask, this Single Malt has a rich Sherry Nose and Brian says "...it's got a finish as long as your arm!"

Matured in a hybrid cask of port staves and red wine heads for 3.5 years. Full of flavour, syrupy and sweet with hints of spice.

Matured in and bottled straight from a sherry cask this was our 2nd release of Peated Single Malt. Matured for just over 2 years this release is sweet, rich and smokey. This cask strength whisky is bottled at 63.7%ABV.
