Applewood Distillery - Limoncello

Applewood Distillery take our Limoncello perhaps a tad seriously. Made from a safely guarded recipe - two different types of lemons from South Australia's oldest citrus plantation in Lennane Orchards, Montacute Valley, Adelaide Hills. This citrus orchard is believed to be planted 150 years ago. 

Why is Applewood's Limoncello important? The lemons are what one might call "UGLY". Yes, they are different sizes and kind of weird looking. Unfortunately, that meant that supermarkets did not want to buy them. So, after trying to sell these ugly little lemons for years, the growers decided to remove the 150 year old trees. To help preserve this historic orchard, Applewood Distillery put up our hands and promised to buy all whole crop to make our delicious Limoncello. 

It is a labour of love. Literally! We spend 12 hours hand peeling lemons from the orchard to produce this delicious drop. In fact, they have a family ritual of taking turns to peel a couple of buckets a day. Everyone chips in!

Being winemakers, we're two people incredibly passionate about the soil and produce we have in Australia. It's our contention to showcase products to the rest of the world that embrace Australian native ingredients and pay homage to the custodianship of the indigenous people who maintained the land for thousands of years. 

It's this passion that has driven us to start two wine labels, one that protects our farmers and another that protects our future. We've since taken these concepts and with our distillery, applewood - catapulted it into the horticultural realm - studying indigenous produce, it's beneficial effects on our land and the stories it can tell through incredible colours, flavours, and textures. 

We seek Australian identity in the products we craft and the services we offer. We seek ways to communicate this with an entirely new demographic. 
Our hope is that these Australian stories can one-day be heard on a global scale.

Great Southern Distilling Company - Tiger Snake

Taking Inspiration from those great Tennessee Whiskeys and Kenttucky Bourbons', comes Australia's first version of a sour mash whiskey.

Like the word Champagne, Bourbon is a Geographic indicator, so it is called 'Sour Mash' whiskey in Australia which refers to the type of grain mashing process. Using a classic grain bill of corn, rye and malted barley entirely sourced from Western Australia, out full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts.

The mixed grain whiskey is richly textured with elegant spices and fruit with a smooth creamy finish you would expect from the Great Southern Distillery. Each barrel is hand bottled and numbered in keeping with their small batch tradition.
